Context & Objectives

SARAH JO SAS presents an innovative solution that leverages maritime transport as a commodity processing unit. The goal is to use the two-week voyage to process and package 450 tons of green coffee into roasted coffee, ensuring the product arrives ready for distribution.

This approach aims to reduce commercialization time, enhance traceability and quality, and increase profitability for producers by eliminating unnecessary intermediaries.

Infrastructure and Setup

Our model combines two essential steps to optimize coffee logistics:

✅  On land: The coffee is hulled (trillado) before export.

✅  At sea: It is roasted and packaged, ready for distribution.

Containers and Equipment

📦 Green coffee storage: 13 containers (40 feet) (6,428 bags of 70 kg) 🔥 Roasting: 2 containers (convection & conduction) 🛠 Packaging: 2 containers for Coffee T+ank and Doy Pack ⚡ Additional infrastructure: sorting machine, pneumatic feeding, compressors


Processing Steps

1️⃣ Sorting and selection: Performed on land before loading.

2️⃣ Roasting:

  • 3 fluidized bed roasters (125 kg/batch)
  • 3 drum roasters (25 kg/batch)
  • Total capacity in 15 days: 486,000 kg roasted

3️⃣ Packaging:

  • 100,000 Coffee T+ank (340 g)
  • 60,000 bags (2.5 kg)
  • 488,236 bags (340 g)

4️⃣ Post-roasting storage: 20,000 boxes (60x40x40 cm)

📌 Freshness and quality: Coffee should be consumed from the 8th day after roasting, once excess CO₂ has dissipated. It retains its optimal sensory profile for up to 9 months. Roasting at sea ensures a fresh, distinctive coffee ready for global distribution without compromising quality.
